New York Strip, Raw, 8 oz.

Internationally, a New York strip is known as a club steak.

A New York strip comes from the short loin–a region of muscle that performs little work; as such, this cut is tender.  A New York strip includes end of a T-bone or porterhouse cut longitudinally instead.  The two latter cuts are more highly prized and occupy a greater volume of the short loin.
