Dried Sour Cherries

Drying fruit is one way to preserve fruit.  In the absence of water, microorganisms have a difficult time attacking foodstuffs.

Successful drying depends on air humidity, temperature, and circulation.  Hold the former low and raise the latter two to speed the rate of drying.

Dried sour cherries lose the majority of their tartness, but maintain some quantity of their antioxidants.
