Borage, or starflower, is a blue flower-producing herb native to the Mediterranean. These flowers are edible and taste like cucumbers.
Young blossoms are pink in color and turn blue as they mature.
Borage is also grown commercially for borage seed oil. This seed oil is exceptionally high in gamma-linolenic acid (GLA)–the highest of any known plant source.
The leaves are edible as well and share the flowers’ cucumber taste, but are not pretty and blue, so who cares really!
