Cacao shells are discarded once the cacao seeds, placenta, and juice are removed for additional processing.
If dried, the cacao shells can be used as a fuel for combustion in the drying of fermented cocoa beans. After fermentation, cacao seeds are still susceptible to molds when moist. Sun drying is common and effective in their natural growing regions, but attack by mold can easily occur over night. As such, heat-assisted drying is sometimes employed.
