Chocolate Bar, Chopped

March 28, 2013

Chop a bar of chocolate to turn a ready-to-eat confection into a versatile ingredient.

A inconsistent chop chocolate pictured above is useful for desserts or confections that allow the chocolate to remain visible.  Asymmetry is always in.

A uniformly sized chop allow chocolate to be readily and evenly combined with other ingredients.  Warm cream, for example, hungrily incorporates chocolate into solution.  Both chocolate and cream are loaded with emulsifiers that allow such a heterogeneous mixture to remain smooth and stable.  Chopping chocolate evenly prior to mixing ensures an even distribution of the two ingredients.
