Classifying pancakes is hard. On the one hand, they have a sweet element among their constituents leading one to believe they could be a pastry, but they are friend not baked. The chemical leavener aspect definitely indicates a quickbread; pancakes may be the beginning of the culinary path that produced muffins, biscuits, and the like.
This particular pancake (lemon curd and all) was drawn on-location at the Satsuma Cafe in New Orleans.
