Arepas in Colombia come in so many varieties its dizzying. They can be yuca or corn-based, hard or soft, with or without cheese–and restaurants produce further permutations on regional classics.
This arepa is sweet and corn-based with queso in the middle. The texture is very similar to a biscuit as per the U.S. American South.
The arepa pictured here came from La Tunjana on the on the Septima in Bogotá.
