Salt is iodized to supply dietary iodine which is necessary for the proper function of thyroid glands. Deficiency causes–among other things–an enlargement of the neck. In this condition, known as goiter, the thyroid becomes swollen and enlarged.
Because iodine deficiency causes over 90% of the cases of goiter, its been added to iodized salt since the early twentieth century. In one fell swoop, goiter was eliminated in the developed world.
