Texas Barbecue

“Barbecue” has become a contentious word in American English.  Variations exist for cook times, seasonings, pH, types of meat, source of heat, fuel–everything.

Frankin Barbecue in particular uses little more than salt and pepper.  The majority of the flavor comes from the meat and the fuel used to slowly cook it for hours on end.
