Chef Chris Chism of Halfcircle Eleven put together a coursed meal based on historically Central Texas cuisine at the Swoop House in Austin, TX.
The chili con carne hors d’oeuvres kicked off this motif. The strong smokey savory tastes were skillfully interrupted by the inclusion of goat cheese which stood up to the deep red in both taste and appearance.
