Fried Cotija

fried cotija and butternut squash

Cotija is a Mexican cheese with a low water content that ranges from feta to Parmesan consistency.  Similar to both, cotija will slightly soften when cooked but will maintain its shape as it refuses to melt.

Mettle in East Austin serves a fried cotija appetizer interspersed with pieces butternut squash over marmalade and garnished with basil sprouts.
