Chef Chris Chism of Halfcircle Eleven put together a coursed for the Supper Friends in Austin, Texas. The meal was based on historically Central Texas cuisine.
The first hors d’oeuvres to be passed was potted chicken liver. The carnal colors of the pâté were offset by the addition of the bright green tomatoes in the chow chow. The entirety sat perched upon a thin cracker.
