“Swordbelt” is another name for Agrocybe aegerita. Swordbelts are perhaps better known as “black poplar mushrooms” or even “pioppinos.”
Their morphology varies from strain to strain. Emerging pins have round caps with a dot of yellow- to orange-brown color. In some strains, these caps persist into maturity with stout bodies.
Others, like to one pictured here, have flat caps at maturity. Caps bend or warp upwards into irregular surfaces while their veils brown and peel away.
A. aegerita produces mushrooms that have a delicious buttery nut taste. Their stems can get a little hard if allowed to mature to the extent illustrated above.
