Chez Rémi produced brunch after brunch for the French Tech Club during SXSW 2014 in Austin, TX.
You were lucky if you were attendance to eat this “piece of love” or brin d’amour. These bright sub-inch spheres gave way to enormous almond flavor and a rich texture to bite and chew.
These tiny tastes were made with flour, egg whites, almonds, and convered in confectioner’s sugar.
