Mature matsutakes show their gilled undersides. If allowed to further mature, the edges of the cap begin to split as the cap curves upward. Frayed cap edges and a stem veil that is clearly torn from the cap are two hallmarks of matsutake maturation and spore release.
As matsutakes age they lose taste and aroma.
The matsutake illustrated above is just past its culinary (and purported medicinal) prime. Look for large mushrooms with an unbroken veil that’s still attached to the stem.
