Perhaps in an attempt to sneak insects into Western diets, Six Foods uses cricket flour as an nondescript ingredient. In addition to their cricket-based chips “Chirps,” Six Foods produced a sweet confection for the Austin Future Food Salon.
Apart from the cricket flour, these chocolate-chip cookies are made from flour, sugar, butter, eggs, salt, and baking soda. Maple syrup and vanilla extract create a distinct flavor. Much like the Chirps previously illustrated, chocolate chirp cookies supply a surprising amount of insect protein to a familiar junk food. Cookies and snack foods are are entry-level entomophagy.
The Austin Future Food Salon was a gathering of entomophagy-championing authors, food producers, chefs, and designers put on by Alimentary Initiatives of Toronto and Little Herds of Austin. The Austin Future Food Salon was housed by Brazos Hall in downtown Austin on February 19th, 2014.
