Absent from mainstream American cuisine, chicken hearts are eaten anywhere there are chickens–which is everywhere. Plenty of other cuisines take advantage of this overlooked muscle.
In particular, they are a Brazilian speciality. Their small size matters little when many are prepared at once on a spit over a barbecue. The result is a flavorful finger food. Eat them quickly. As they cool, they become rubbery and organ flavors become more pronounced.
