Cocoa mass is the first stage in the production of chocolate that can actually be called “chocolate.” It is an unrefined mix of the oil fraction and cocoa solids.
When melted, cocoa mass is called cocoa liquor. Further refining of chocolate requires cocoa mass to be melted to be split into varying proportions of oil and solids.
