Arriba refers to a variety of cacao prized for its incredibly diverse tropical flavor complete with floral notes. Today, this is largely a marketing gimic; true arriba was wiped out by disease in the early twentieth century.

Forastero cacao seeds (or here, “beans”) are typically flatter than their criollo cousins.
