Black Périgord truffles (Tuber melanosporum) are named for the Périgord region of France. Their cultivation is almost exclusively European.
Black truffles have a very delicate flavor. Heat absolutely kills their musty sweet taste and should be used sparingly–if at all.
Shave or grate as thin as possible for the most flavor per Périgord truffle. A simple butter sauce for pasta can be made in this way by heating the butter first and adding the shavings immediately before eating.
